Tiramisu
I prefer to make it into around a dozen or so ~150ml coffee cups. This makes it easy to serve and eliminates the need to divide the dessert which in my hands often ends up being on the softer side and thus a messy ordeal.
- ingredients
- 2 eggs
- 50g sugar
- 250g mascarpone
- 200g heavy cream
- 200g lady fingers
- coffee
- cocoa powder
- instructions
- brew coffee to taste and allow it to cool
- separate egg yolks from the whites
- whisk the egg whites to stiff peaks
- separately whisk egg yolks with the sugar
- optionally cook in a double boiler although traditionally are left raw
- mix in the mascarpone
- then add heavy cream and mix until it all thickens
- fold in the egg whites
- dip lady fingers in coffee and layer them
- then add a layer of cream
- repeat with layers of lady fingers and cream until done
- top with cream and sprinkle cocoa powder on top
