Apple Quark Crumble

- 200g flour (T45/T405/00)
- 100g sugar
- 0.5tsp baking powder
- 125g butter (room temp)
- filling
- 2 eggs
- 40g sugar
- 200g quark (kohupiim)
- 100g sour cream
- half a smaller lemon
- ~2 larger apples (or 4-5 smaller ones)
- instructions
- peel the apples
- crumble
- in a bowl combine flour, sugar, and baking powder
- chop up the butter into smaller pieces and add to a bowl
- work the mixture between your fingers to break the butter into smaller pieces until it starts to resemble sand
- pour about 80% of the mixture to a tart pan and press to cover the bottom and the sides
- filling
- whisk the eggs with the sugar
- add quark, sour cream, some grated lemon peel, and lemon juice
- mix well
- pour the filling on top of the crumble
- slice the apples and cover the filling with the slices
- lay the rest of the crumble on top of the apple slices
- bake at 180°C for about 40 minutes
